Good question! Yes, I do have coffee with my mug brownie – an Americano to be exact. I’ve never done a self test to see if not having coffee with a sweet treat affects my blood sugar (BG) differently. As a diabetic on insulin (whether you’re Type 1 or Type 2 using our juice of life) – I just bolus (take insulin) to cover the carbs for all foods involved. I have read studies similar to the links you’ve posted over the years about the "benefits" of coffee for Type 2’s. I have to admit – one day they say something is good – then next day it’s not. The way I apply anything I read – is if it works for you – don’t change it. I do know that some Type 1 diabetics say coffee raises their BG’s as well – whether it’s to do with adrenal rush (I maybe wording that wrong here – remember – I am not a medical expert!) – or perhaps they put sugar in their coffee (I do – I bolus for the amount I use). Do you have coffee with that brownie? As a person with T1D how does it affect your glucose levels? A new study following over 75,000 people over 4 years shows that increasing coffee consumption reduces the risk of Type 2 diabetes. A few people in other social areas I posted this recipe have asked if it's possible to make this without chocolate / carob (they are allergic to cocoa). I'm thinking subbing some of the ingredients (brown sugar / Splenda Brown Sugar for the white sugar - butter or coconut oil for the oils shown in the original post) might be the way to go for making a blonde brownie version of this. I did come along with link quickly - if you find something better - let me know!
