I am a Type 1 diabetic diagnosed back in the early 60's as a child.  I am living in Montreal, Canada and enjoy scribbling about diabetes from time to time. I’ve had my ups / downs just like any person would experience with going through life - diabetic or not.  My motto in life?  Diabetes does not control me – I control it!!

  • D-Feast Friday - Potato Gnocchi – aka KD Fat Cat Anna Style!


    I owe this recipe idea to Katie Zeller at Thyme for Cooking (V – her hubby was diagnosed with pancreatic cancer last year – and is now on insulin).  Her recipe uses pumpkin instead of potato for the gnocchi (which one day I’d like to give a go at).  I have tried to make my own with potato, but it’s a lot of sticky work and these ready made ones I use from Emma, a company in Italy at under $3 CDN are a no brainer.  I always keep a bag of these at the sailboat and in the house, for the days I am a) too lazy to cook from scratch (aka the reference to KD);  and b) it was so humid the day I made this meal my brain didn’t want to think about cooking! That’s my excuse and I’m sticking to it.

    So, hubby made a side salad – the wine was uncorked – and meal was made under 20 minutes!  This serves 3 people as a main meal with a side salad, or can be served as an appetizer for about 8 people.

    Ingredients –

    • 500 gram bag of Potato Gnocchi – or you can make your own 
    • 1 ½ cups of tomato sauce preferably home made (see last week’s D-Feast Friday entry – with link to the sauce I used) or amount to just cover the gnocchi.
    • 2 Tbl olive oil
    • ¼ cup grated Parmesan cheese (optional)
    • Freshly chopped basil – you can use as much as your taste buds want  - I use quite abit

    1) Bring medium pot of water to boil, add salt according to package directions of gnocchi; follow instructions, when they bob to the top (2-3 minutes) they are done, pick up in slotted spoon, set aside until all are done;

    2) While you are doing the bob for the gnocchi bit (WARNING: do not use mouth like video link shows please), place a nonstick medium sized fry pan on medium heat with the olive oil;

    3) Once gnocchi is all cooked, make sure most of moisture is off of them, and then toss into fry pan, start to stir the gnocchi around for about 1-2 minutes or until they start turn golden;

    4) Next add the tomato sauce and throw in the chopped basil, cook until heated thoroughly, about 3-4 minutes.

    5) When serving, sprinkle with Parmesan cheese and extra basil if you wish and serve with a green salad on the side.

    Oh, I so love fried gnocchi!  I've never tried making potato gnocchi.... I made spinach, once - now that was sticky.... yummy, but sticky.  Looks delicious!
