The Roller Coaster Ride of Diabetes! Whoo! Whoo!

I am a Type 1 diabetic diagnosed back in the early 60's as a child.  I am living in Montreal, Canada and enjoy scribbling about diabetes from time to time. I’ve had my ups / downs just like any person would experience with going through life - diabetic or not.  My motto in life?  Diabetes does not control me – I control it!!

  • D-Feast Friday - Peanut Butter / Marmalade / Bacon Butty


    Okay – a few of you are going to be going – gross, gross, gross – but it actually is a really yummy combination – and a butty is a sandwich or sarnie (you don’t only have a cooking lesson – but also a language lesson <lol>).  It’s something my Mum used to make from time to time as a lunch for us as kids (though I’m not sure if my brother liked it – have to ask him – he was a picky eater at times).  The one thing, you have to use bacon from a pig.  I’ve switched over recently to turkey bacon, and it’s not the same, so luckily I have a butcher close by that I can just purchase the slices I need, so there is no waste.

    So, ingredients are very simple.  Your choice of bread, 2 slices (you are making a sandwich right).  I prefer something with abit of nuttiness in it (of course, you can’t beat my homemade bread).  Then you need some peanut butter (chunky or not – whatever is your preference), orange marmalade (Robertson’s Golden Shred is my favourite since I’m British), and 3 slices of bacon (if you want more – you can have more – depends on your love of  bacon – and how many high fat meat exchanges you are allowed).

    Cook up the bacon until it’s nice and crispy, lay it between a sheet of paper towel to soak up any access fat – set aside – toast up bread – then put peanut butter on one slice of toast  – then marmalade on the other slice of toast – place bacon on top of one slathered slice of toast – plunk down other slice of toast – and now you have the most delicious butty/sarnie/sandwich that you have ever had.  Don’t roll your eyeballs at this until you have given it a try – if you like all of these ingredients – trust me – you will love the combination of peanut/saltiness of smoked bacon/bitter sweet marmalade!
